Spudnut Donuts Recipe


In a large mixing bowl add 2 1/8th cups water and 2 tablespoons yeast.
Gently stir and let stand for 5 minutes or until foamy.
Add 6 cups Spudnut Donut Mix to the yeast mixture.
Blend together for 5 minutes. If using an electric mixer, use the dough hooks. Constantly scrape sides of bowl.
Add flour if needed 1 tablespoon at a time.
Blend again for 5 minutes until smooth and elastic.
Turn dough into a lightly greased bowl.
Cover. Let rise for 30 minutes.

*Oven method: Heat oven on lowest setting. Place covered dough in oven,
then turn oven off. Let dough rise til double.

Punch dough down; cover and let rise again for 30 minutes.
Then punch dough down again and turn out onto a lightly floured surface.
Instead of flour you can spray your counter with PAM or oil to prevent sticking.
Divide the dough in half. Roll out each half to 1/2 inch thickness.
Let dough rest for 3 minutes.
Cut with a floured donut cutter.
Gently place cut donuts on wax paper.
Cover; let rise until very light and fluffy. 45-60 minutes.

*Shortcut Method: Heat oven on lowest setting for 1 minute with 2 pans of warm water on lower rack. Place covered donuts in oven on the upper rack, then turn the oven off.
Let rise 15-10 minutes.
While donuts are rising, prepare the oil. Heat olive oil or vegetable shortening to 375-380 degrees. (If oil is smoking, it's too hot! Use a cooking thermometer.)

Carefully add 2-3 donuts and fry about 25 seconds.
Use long wooden sticks to tun and then fry about 25 seconds on the other side. Use the long wooden sticks to remove the fried donuts and place on paper towels.

While donuts cool a bit, make the glaze.
In a large mixing bowl add 3 cups powdered sugar, 1/2 cup hot water,
and 1 drop vanilla extract.
Mix together until nice and smooth.
Using either the long wooden sticks, or your fingers,
gently drop the fried donut into the glaze.
If you want both sides glazed, turn donut over and glaze the other side.
(the long sticks, make this much easier to do!)
Make sure you put the donuts onto a cookie sheet or a cooling rack.
Then the glaze can run down the donut.
Sit down, relax and sink your teeth into a warm delicious Spudnut Donut!
